Mike’s cooking classes are so much fun! I’ve done a number of Zoom classes with him (Indian, Ethiopian, Spanish tapas) and also organized a private Zoom class making Thai dishes with our family who are in Los Angeles, Minneapolis, Toronto and Ottawa. Mike has a ton of knowledge about cooking and food which he shares … and he’s very relaxed, unintimidating and flexible in his approach. Didn’t buy the right chili peppers? Mike will tell you it’s not a problem using the ones you got … the dish may just not be as spicy. Don’t know which knife to use? Mike will give you a quick tutorial and then refer you to his video. His friendly and very personal manner made the classes really enjoyable and fun to take. And to top it off, his recipes are delicious and keepers! How great is that?

Guatemalan Cooking Class Mike hosted a Guatemalan cooking class to support an organization (Planting Seeds International) that is near and dear to my heart.....but I grew up in a family where the Sunday roast of beef went into the oven at 10 AM for dinner at 4 PM! Black beans.....rice....tofu!! a vegetation meal – I was skeptical. We assembled the ingredients and logged on to ZOOM to see how this would work. What a surprise! Mike our congenial host and chef immediately established a super comfortable environment and soon it felt like he was our personal instructor. The prep was fun and relaxed and the result???? A delicious Saturday evening vegetation meal and I even enjoyed the tofu. If you or your group are looking for a fun event, I highly recommend a cooking class with Mike.

Class: Plant Based Thai Cuisine I would recommend doing a cooking class because it allows you to step out of your comfort zone by creating something new! There's an endless number of recipes online, and it's difficult to know whether or not it 'will work'. With Mike's classes, you KNOW he has tried these recipes time and time again. The food never disappoints. I appreciated the number of times substitutes were recommended as well. Sometimes it's hard to find a specific ingredient, but Mike always lets us know what we can use instead so that flavour isn't compromised. I also loved learning about different ingredients (like, galangal!). Not only are you learning a new recipe, but you're learning about a culture. Personally, I watched the video live and then used the recipe cards to make the food afterwards. I like that Mike used two different cameras to show us different angles in his kitchen. I'm totally a visual learner when it comes to cooking, so this was awesome. I would 100% sign-up for another class! It feels like you're cooking with an old friend.

I would recommend doing one of Mike's cooking classes because you always get more than a cooking class! Mike has a wealth of knowledge that he is very passionate about sharing with his audience. Anything from tips on how to cut your vegetables, the benefits to adding more plants to your diet, and how food can overall change your stress levels and overall well-being. Mike also takes the time to learn and understand where the original dishes come from and shares information about different spices or staples that are used in the dish. What I appreciate about Mike is that he will share with compassion and meet his audience where they are with no judgements and a listening ear along with providing tidbits where one could start leading a healthier lifestyle and plant-based diet. I almost forgot to let you know about the final product! All of Mike's recipes are delicious and I have taken the time to add a lot of them into my cooking rotation. The dishes have been very flavourful and delicious! Once you have all your necessary ingredients, which Mike has helped me find in the grocery store, they have become some of my staples that I use around the kitchen. Some of my favourite recipes from Mike are; Creamy Mushroom Curry, Epic Plant Based Lasagna and Winter Squash & Chickpea Tagine. Get your tastebuds ready, you are in for a treat! I did a fantastic Plant-Based Taco Night live online cooking class with Mike, together with my teenage kids. It was our first time doing an online class and we thought it might be awkward being online from our own kitchen. No need! Mike is extremely warm and welcoming. There were about 8-10 other groups doing the same class, and almost immediately it felt like we were all in the same space. We got detailed lists of what we needed in good time so we could set up our equipment and ingredients in advance. We really appreciated acquiring some pro techniques and we really enjoyed learning about the different flavors and cooking methods. Mike kept a steady pace throughout the class so it definitely helps being prepared, with all ingredients ready so you can keep up. At the same time, he did a fantastic job explaining everything about what we were doing and giving examples of how we could modify if we didn’t have exactly the same appliances or ingredient as he had. The guacamole and the chunky salsa have become some of our family’s go-to’s - actually made it to our “book of favorites” The recipes are simple and clear and easy to follow. It was also so fascinating to make the “meat scramble” that we made with mushrooms and lots of spices! I admit that some members of my family still prefer chicken but being able to offer other options is so great! The whole experience was really a blast! Mike is a very enthusiastic person and the same time such a patient teacher, giving very clear directions and tips. I don’t think that I have ever been so efficient in my cooking before. We ended up with a really tasty taco meal which we truly enjoyed and I highly recommend Mike for an online cooking class!

Mike is an energetic, and upbeat instructor and teacher. Mike assures the group that the recipes are manageable with realistic steps and timelines to recreate the dishes. I was truly surprised to learn that incredibly delicious plant based dishes can be created with very common grocery items. It can be intimidating to make plant based dishes from scratch, but Mike made it easy. Furthermore, the recipes can be recreated on busy evenings and never get repetitive with how flavourful they are. I really enjoyed being able to stick to the timeline of the class to create the meal from start to finish. I did not know Mike before enrolling in the Plant-Based Power Up 2.0 class and I am absolutely happy and grateful that I got the chance to get to know him and to be part of this amazing virtual cooking class at the end of the course. I am 21 years old and I am currently in my 4th year of nursing. I always had a passion for Health, Fitness and Nutrition. I really enjoyed the cooking class for numerous reasons. First of all, Mike has a kind, friendly and enthusiastic approach and definitely knows how to make each class entertaining and how to make everyone feel welcomed right from the beginning! As far as the cooking class itself, what I enjoyed the most was without a doubt, preparing the plant-based hamburgers and eating it wrapped in lettuce instead of in a bun. I was also astonished about how good they tasted, either hot or cold the day after, and the different ways you can incorporate them in your meals; for instance, thrown in a salad or a nourishing bowl. However, what I liked the most about the recipes we have prepared was knowing that every ingredient used in each recipe prepared were fresh and healthy and made a good nourishing meal without using any animal-source products! On the other hand, one of the main things that I benefited from the class was learning that you can easily make your own condiments at home (ex; ketchup and mustard), in no time, that taste just as good and are even better, with just a few healthy ingredients; instead of buying the products at the grocery store that are full of unhealthy ingredients! Ultimately, Mike’s cooking class increased even more my love for plant-based nutrition and the impact it has on a healthy lifestyle. Lastly, I found that Mike’s cooking class showed me how it is easier than we think to prepare a quick, delicious, and nutritious plant-based meal; and for that reason, I most certainly would recommend taking the time to participate in one of Mike’s cooking classes!
